Corn And Cheddar Muffins

- 1 cup flour shopping list
- 1 cup cornmeal shopping list
- 1 tbsp baking powder shopping list
- 1⁄2 tsp salt shopping list
- 1⁄4 cup sugar shopping list
- 1 large egg shopping list
- 1 cup milk shopping list
- 5 tbsp unsalted butter, melted + enough butter to grease the pan shopping list
- 1 1⁄2 cups grated mature cheddar cheese shopping list
- 1 cup corn kernels, I used canned shopping list
How to make it
- Preheat oven to 200C.
- Butter the insides and the top of a regular muffin pan (1/3 cup).
- In a large bowl combine the flour, cornmeal, baking powder, salt and sugar.
- In a jug, beat the egg, add milk and melted butter. Combine with the dry ingredients and add cheese and corn kernels, but do not over mix.
- Spoon the batter into the muffin pan.
- Bake 17 minutes or until a tooth pick inserted in the center of the muffin comes out clean.
- Best served warm.
