How to make it

  • Preheat oven to 200C.
  • Butter the insides and the top of a regular muffin pan (1/3 cup).
  • In a large bowl combine the flour, cornmeal, baking powder, salt and sugar.
  • In a jug, beat the egg, add milk and melted butter. Combine with the dry ingredients and add cheese and corn kernels, but do not over mix.
  • Spoon the batter into the muffin pan.
  • Bake 17 minutes or until a tooth pick inserted in the center of the muffin comes out clean.
  • Best served warm.

    Wow what a fantastic recipe. I used frozen corn which I allowed to defrost first. Easy to pull together on a busy day.
