Cranberry Orange Muffins

    Great muffin, made as directed but used dried cranberries and it worked great.
    I didn’t sprinkle sugar on top, I made a glaze with the juice of the orange and icing sugar.
    I didn’t measure just mixed the icing sugar in the juice till it coated a spoon. I poked a few holes in the muffins so the glaze soaked in.
    Spooned over the warm muffins and the flavor was really good.
    I made these for friends that I had over for lunch and out of the twelve muffins none are left.
    I had a small taste of the and it was good. I’m not a sweet eater but I do like muffins.
    I also used Natrel lactose free milk in place of the milk and lactose free butter.

    I noticed Shona made these and took her advice and baked them at 400f and done in 18 minutes.

    I love the sound of your glaze, good use of the orange after zesting, I will have to try. And I might just try it with dried cranberries too, since that's all I have at the moment. ;)

    I made them just like you Manella, with the dried cranberry and orange glaze, delish!! The only thing I did differently was plump up the dried cranberries in hot water for few minutes before draining and folding in. I used a Satsuma orange which is sweet but still citrusy. They are definitely sweeter with the dried cranberries vs frozen/fresh cranberries--but not overly sweet by any means. Yum! :)

    Hello Shona, Yup the glaze was good, after I zested the orange I thought a glaze or syrup would work and it did. I like your idea of putting the cranberries in hot water, next time I will. I got the baking cups at Sobey’s , Superstore carries them also. They are made by Pantry Chef. Glad I could help you making a decision on muffins:)))

    The kids loved the muffins too, they each had 3 after school today, lol...they are very light and airy though. Some muffins have a weight and density to them, these are light as a cupcake. :)

    Hello Shona, yes those baking cups makes for a easy clean up. They come in three sizes, so I buy all three,great to have on hand.
    3 muffins each, wow great Appetit they have and that is wonderful. I love to see kids eat and enjoy.

    I too love your paper muffin cups! I used to order all kinds of cute muffin cups online but haven't in a while, I'll have to look for some like that :) These muffins sound delicious, I need to short list them! I have yet to meet a muffin that doesn't freeze well, so they should be fine :-)
