Cream cheese cranberry muffins

    Wow are these good! I creamed butter and cream cheese before adding sugar and vanilla as I wanted it smooth. This differed from instructions. My frozen cranberries froze the dough making it hard to scoop into liners. Just takes some fussing but the result is a sweet tart delicious muffin. Topped with raw course sugar for crunch. Highly recommend!

    I always cream the butter/cream cheese with the sugar first then add the vanilla after the eggs, lol...I guess it all works out in the end ;)
    This would probably make a great quick bread/loaf too, yum!

    When I upload photos from my phone onto this site they come out sideways. I end up having to play around with the photos flipping them around and around and sometimes it works and sometimes it doesn't :\
