Creamed Hard Boiled Eggs

    I have been wanting to make this recipe for some time now and finally made it this morning. This was a dish my mom made when I was young but I hated it then. A lot has changed over the years including my tastes for foods. This was great!!
    Creamed Hard Boiled Eggs
    My review: My mom made this on meatless Fridays and/or to stretch the food budget when I grew up. I hated it then but my taste has matured a lot over the years and I found this recipe delicious and truly comforting food.
    I didn't use rosemary or thyme but did add a sprinkling of paprika. That's how I remember my mom making it.

    My mother made these creamed hard boiled eggs for me also as a kid. But, she sieved the egg yolks over the top. These are called Eggs Goldenrod and so yummy. I love them, however, husband not so much.

    It's ridiculously easy to make Shona. Make a small test batch and see. I used 2 hard boiled eggs, 1 T. butter, 1 T. flour, and 1/2 c. milk and it was enough for me.

    LindaLMT - Dried chipped beef is something I could not embrace as a kid. My husband, however, remembers it from his Coast Guard days and said it was a hardy and welcome breakfast while at sea in the North Atlantic ocean. Perhaps I should give it a go sometime - tastes do change!

    Fantastic photo, LindaLMT! It looks really good and I'll bet it's something my hubby would really like. Like you, I now enjoy many foods that I wouldn't eat growing up. They bring back wonderful memories of home and growing up. I guess that's what they mean when they refer to something as a "comfort food."

    Thanks DIZ. It is funny how much one's taste changes over the years and continues to change. There are things I liked and now no longer do and visa-versa. I use to like Kielbasa and made a great soup using it recently only to discover I don't like Kielbasa anymore.

    Yum!!! I actually love creamed eggs or goldenrod eggs. My Mom didn't make it growing up but I started making it years back when I saw a recipe for it. I think I've made one from here? Never had creamed chipped beef though! Gorgeous picture :)

    I just made this for Brunch today since my Hubby is off work. I used 4 hard boiled eggs, 2T Flour, 2T Butter and 3/4 cup milk. And like Linda did, I didn't add the herbs, just S&P and topped with paprika. Delish! My DH loved it especially! He loves eggs and one of his favorites is eggs benny, it reminded him of it. I think if you topped it with lemon juice and served it with back bacon it might be like eating a deconstructed Eggs Benny! ;)

    I see other recipes flavor the cream sauce with a little chicken bouillon but I didn't grow up having that but it's an option. That's great you both enjoyed it Shona!!
