Creamy Blue Cheese Stuffed Mushrooms

    So, at every Holiday get together, my Memaw would make a ton of stuffed mushrooms because they were my Papaw's favorite. I don't remember what she put in them but it wasn't blue cheese :-P. I think it was pretty basic, cream cheese maybe mixed with some shredded cheddar?

    So I decided to make some fancier mushrooms and I am a big blue cheese lover as of recently (used to hate the stuff). These are soooooo good!!! I was a little confused by the directions. I have never heard of sauteing mushrooms before stuffing them! I actually liked it because they were ready from the oven sooner. And nowhere does it say to actually stuff the mushrooms? Anyway, I went with it and they turned out delicious. Bacon would go great in these if you want a little texture, but they were yummy as is :)

    I love this and I bookmarked it! We buy Blue cheese on occasion and every once in a while I have a wee bit left and don't know what to do with it. Last time I made a Blue cheese butter for steak and that was yummy but NEXT time....I'm gonna make these mushrooms. Fabulous upgrade to an old home recipe Michelle. Good find!

    Oh yeah, I halved it! Filling amounts are pretty spot on too, I had a tiny bit left :)
