    Creamy Spring Squares by Murka

    This was delicious!! My Dh's favorite dessert is "sex in a pan" or "passion in a pan" as his mom would call it; which is very similar to this except with vanilla and chocolate pudding instead of lemon. However this recipe with lemon is much better in my opinion! I love the lighter, more refreshing taste. The creamy lemon flavour is subtle, without the acid from any lemon juice but you get that slight tang from the cream cheese. I added some lemon zest to the top of the squares for that extra boost of lemon flavor, and next time I would stir some into the crust as well.
    The only thing I would suggest is to not use fresh whipped cream for the topping as that might not store well in the fridge. You can buy a whip cream stabilizer like Dr.Oetker brand "whip It" (comes in little sachets). Or use some of the dry pudding mix in the whip cream or some of the cream cheese, either will stabilize it. (look at stabilized whipped cream recipes online for exact amounts). But what I did was use Cool Whip instead, easy peasy! ;)
    Freezing the squares for an hour was a great tip in the recipe so the squares are easier to cut. The photo shows it still frozen. It didn't freeze hard so it was very edible that way. However we liked it better from the fridge which was very creamy but falls apart easily.
    A great, no-bake, easy, light, and yummy dessert!!

Hopefully people hoarding grocery's will slow down because my fridge is bare and cupboards very low. I have no fresh veg except for celery and carrots, no canned tomato products and just corn, peas and broccoli in my freezer. One box of pasta, one can of beans, some rice, lentils, cereal and dog food. That's it. :(
    We may have to get creative with our recipe challenges! Lol.....Hopefully everyone here is doing ok finding food!

    I'm so sorry your out of milk and running low on food :( Luckily we have a store that restocks every night and limits what you can get and only lets so many people in the store at a time. It really helps with everyone getting a chance to get milk, eggs, toilet paper, canned goods etc. Have you tried any local stores yet? They may not be as bad as you think. I stopped by Walmart today at about 11 and it wasn't even busy!

    My gosh Shona, I’m so sorry your going through that. It not too bad here today. I forgot to get milk Friday so we went to town and while they were low I got enough milk for a while.
    Also got some fresh veggies. Are you close to a Wal Mart? They seem to be doing ok.
    I hope you get stocked up soon Shona.

    I ordered grocery's online on Monday but they are so booked we have to wait until tomorrow to pick it up from Superstore. They did warn that they might be out of alot....so I'll have to wait until tomorrow night to see what I'll get! I know the Walmart here was completely wiped of all fresh food, dairy and meat on Monday, and the little store in town was too. But I haven't been able to leave the house myself for ten days now. Sophia's been sick with Covid symptoms since last Mon. But they wouldn't test her because we didn't travel or been in close contact with someone who has travelled, so they said to self-quarantine for 14 days. (I'm pretty sure she picked it up from the orthodontist office!) Pete is still working, luckily our house is big enough we each have our own floor, bathroom etc..so we distance each other! Except I have to care for Sophia. Luckily her fever is down but she is coughing quite a lot. We're just getting to that cabin fever stage now! ;)

    If you can buy nuts you can make your own nut milk. I've been making my own with cashews. Will be trying walnut soon. I don't use that much milk, just in my morning coffee and if I have a bowl of cereal but I can eat cereal dry if I have to.
    Awww, I hope Sophia feels better and the rest of you don't get sick.
