Crockpot Beef Barley Soup

    A very easy soup to make on a cool day. I doubled the recipe to be able to freeze some.
    I make my own stock but didn’t have enough beef broth so I added some vegetable broth
    that I had, worked out fine. Tasted it half way through and thought it was a bit flat, so I added some basil and parsley and also a quarter of a chicken cube.
    I found it a bit on the thick side so I added more vegetable broth.
    It did not take as long as the submitter wrote, but I find different slow cookers cook either fast or slow.Mine took around 4 hours on low. Next time I will use my older slow cooker, I think my new one cooks hotter.

    Yummy Manella! Looks perfect :) I regret getting rid of my old crockpot that was probably 20-30 years old. They just cook so much slower and accurate! Today's slow cookers are barely even slow cookers lol, they run so hot!!

    When I make barley soups in the slow cooker I like to add the barley half way through the cook time so it doesn't soak up too much liquid (if you use pearl barley). Since newer slow cookers run hot I usually cut recipe times in half as most recipes are much older than my crock-pot! ;) Almost everything I make is done in 4-6 hrs. It's a bummer when you really want to cook something all day. I just found out that after having this crock pot for a few years that i got the low and high settings mixed up, it's marked by slashes: I for low II for high. I got them mixed up and wondered why everything boiled on low, lol.. ;)

    I agree about the slow cookers/crock pots. My old one is about 25 years old and to big for us two, but still works great. The newer and smaller one runs much to hot.
