Crockpot Beef Barley Soup Recipe
I took two recipes and combined them into one to make this yummy and very hearty soup!

Ingredients
  • 1 pound of lean stew beef, cut in 1/2 cubes
  • (I used 1 1/2 lbs top round steak cubed)
  • 1/2-1 cup onion, chopped
  • 2 ribs celery, chopped
  • 2 medium carrots, diced
  • 1 cup barley
  • 1 bay leaf
  • 4 cloves garlic (or the equivalent of dried minced)
  • 1 tsp dried thyme
  • 4 cans beef broth (or beef stock if you have it)
  • salt and black pepper to taste

Directions
  1. Throw it all together in the crockpot. Cook on low setting for 6-8 hours.
  2. YUM!
