Crockpot Beef Barley Soup

- 1 pound of lean stew beef, cut in 1/2 cubes shopping list
- (I used 1 1/2 lbs top round steak cubed) shopping list
- 1/2-1 cup onion, chopped shopping list
- 2 ribs celery, chopped shopping list
- 2 medium carrots, diced shopping list
- 1 cup barley shopping list
- 1 bay leaf shopping list
- 4 cloves garlic (or the equivalent of dried minced) shopping list
- 1 tsp dried thyme shopping list
- 4 cans beef broth (or beef stock if you have it) shopping list
- salt and black pepper to taste shopping list
How to make it
- Throw it all together in the crockpot. Cook on low setting for 6-8 hours.
- YUM!

Love this recipe!! I'm a big fan of crock pots and barley soups!! Unfortunately, I'm not a fan of celery. I think I'll be substituting it with a bit of fresh spinach. Yum! Thanks!
