Crockpot Beef Barley Soup Recipe

I took two recipes and combined them into one to make this yummy and very hearty soup!

Ingredients
- 1 pound of lean stew beef, cut in 1/2 cubes
- (I used 1 1/2 lbs top round steak cubed)
- 1/2-1 cup onion, chopped
- 2 ribs celery, chopped
- 2 medium carrots, diced
- 1 cup barley
- 1 bay leaf
- 4 cloves garlic (or the equivalent of dried minced)
- 1 tsp dried thyme
- 4 cans beef broth (or beef stock if you have it)
- salt and black pepper to taste
Directions
- Throw it all together in the crockpot. Cook on low setting for 6-8 hours.
- YUM!
