Crockpot Chicken Taco Chili

    Crockpot Chicken Taco Chili by Frankieanne

    This is delicous! And super quick and easy to put together! I usually don't like cooking chicken breasts in the slow cooker. But this worked out great. I only had to cook it on low for 4 hours rather than 10 hrs. I did use smaller, thin chicken breasts though, so it could take 6-8 hours if yours are thicker.
    I liked that there was no extra pots or pans, bowls etc. to dirty, everything goes straight into the crockpot. I only had to chop an onion. FA says she didn't use the tablespoon of cumin, but I did. And She used chipotle chili powder for the regular chili called for. I used a little of both, but rather than measure it I just sprinkled some in than adjusted the taste at the end because the chili powders I have are quite spicy.
    I didn't have the two 14.5oz cans of tomatoes with green chili's, so I used one 28oz can of diced tomatoes and added one small can of mild green chilis.
    There is no liquid called for in the recipe, so it makes for a thick chili. The picture I posted was taken immediately after adding the chicken back in after shredding it. So it had more liquid in the bowl. By the time I scooped out a 3rd and 4th bowl for the family, the chicken soaked up most of the liquid and it was like a taco filling. But I liked it that way since I used tortilla chips as my spoon! In another review, Marie's husband ate it on soft tortillas, and Points said he'd make burritos with the leftovers. The leftovers I have are quite thick too and would make a great burrito or enchilada filling. But I think I will add some liquid to it when I reheat it and make it into a taco/tortilla soup. So it's a very versatile recipe!

    The only time I like cooking chicken breasts in the slow cooker is when it gets shredded. Since there is no chicken broth it didn't taste too tomato-ey? Great, yummy picture Shona, I want a bowl right now!!

    Thanks Michelle! Yes, it is quite tomatoey. Very similar to most beef chili's I've made. It has the taco seasoning and extra cumin and chili powder though, so the tomato flavor is balanced by the spices. I quite liked it thinned out with chicken stock when I reheated the leftovers. I liked it soupy, Dh liked it thick and chili style. I'll probably thin out half of it for me next time! ;)
