Crockpot Chicken Taco Chili

- 1 onion, chopped (I had a little over 1/2 cup of chopped white onion) shopping list
- 1 - 16 oz can black beans, drained and rinsed shopping list
- 1 - 16 oz can red kidney beans, drained and rinsed shopping list
- 1 - 16 oz can tomato sauce shopping list
- 10 oz package frozen corn kernels shopping list
- 2 - 14.5 oz can diced tomatoes with green chilies shopping list
- 1 packet taco seasoning shopping list
- 1 Tbs. ground cumin (I did not use this) shopping list
- 1 Tbs. chili powder (I used chipotle chili powder) shopping list
- 3 to 4 boneless, skinless chicken breasts (I used two breasts and one thigh) shopping list
How to make it
- Place all the ingredients into the crockpot except the chicken breasts (I used a crockpot liner).
- Stir around with a spatula to make sure everything is mixed and incorporated well. Tuck the chicken pieces into the mixture making sure the chicken is covered.
- Cook on low for 10 hours or on high for 6 hours.
- Minutes before serving, remove the chicken from the pot and shred the chicken. I used two forks and it shred really easily. Add back to the crockpot and stir chicken back into the mix.
- Serve with whatever toppings you prefer. I used Mexican blend shredded cheese and green onions and scooped it up with tortilla chips instead of a spoon.

This is great! So easy to throw together too. I only had to cook it on low for 4 hrs and the chicken was fall apart tender. I did use the cumin and a mix of chili and chipotle powder. Like FA, I also scooped it with tortilla chips instead of a spoon!...more
