    Crunchy Apple Custard Pie

    I was originally searching for a Dutch or French apple pie, which is sometimes a custard-apple pie but it always has a streusel topping. When I came across this recipe I knew I had to try it because it has no pastry crust. Instead, it has an oatmeal-cookie type dough pressed into the pie plate, which is similar to the oat-crumble topping.
    It's like a custard apple pie meets apple crisp. If you like apple crisp or a Dutch apple pie you'll love this. And I don't see why you couldn't use a regular apple filling instead of the sour cream custard filling. The filling is basically just 2 eggs, sour cream and brown sugar that you fold the sliced apples into. Easy.
    I let it cool to room temp, which took about 2hours and served it with ice cream. My family loved it that way. However I do prefer custard fillings cold from the fridge so I had a slice for breakfast! I told myself it was granola with fruit and "yogurt". Lol! ;) ;)

    Awesome photos, Cosmicmother! I have missed your baking! Apple pie is not my favorite, but your photos and description has me wanting to try this. The oatmeal cookie crust sells it!
