Cuban Midnight Sandwich

    I made a huge pork loin roast for New Year’s and one of the things I love to make with the leftovers is a Medianoche (a.k.a. Cuban Midnight Sandwich). Lots of variations for this sandwich, but this recipe is a classic version. I’ve always made them using sub sandwich rolls, but the only thing they had at the store were round hoagie rolls. They actually worked better because the slice of loin fit perfectly. I’m not real big on the mustard so when I make these at home, I use a mix of Dijon mustard and mayonnaise. In the restaurant, I just ask them to go light on the mustard. I used a non-stick skillet and a spatula to press it flat. I’ve also used my indoor grill similar to a Foreman so the bread will have beautiful grill marks.

    Just woke up, haven't even had my first cup of coffee, but I WANT that! Great picture DIZ! I've only had a couple of Cubans and I liked them. As Bakerme and Michelle said, I find pork leftovers sometimes a challenge to use up as well. This looks deelish! Bookmarked to try! (I may have to go make a pork roast now just to have the leftovers available!!!)

    Wow, this looks and sounds delicious! I always use leftover pork for stir fry's, but I never thought to use it in a sandwich. Will have to try it soon! :)
