    Delicious Strawberry Loaf
    yesterday for the June IMI11 Strawberry Challenge. Had young guests visiting who did the taste testing for me. :)

    I followed the recipe to a T although I couldn`t find Berry extract. Is this a common ingredient? I subbed Vanilla extract.

    The recipe went together easily. I did have trouble with pan size. Initially I put the batter in two 8 x 4 pans but I had a lot of batter left so ended up scooping out one of them into a 9 x 5 pan.

    The cook time was spot on.

    Consensus was that it`s a nice loaf but we all thought it could just use some extra oomph. (Maybe the berry extract?) Had one piece plain and then put sliced fresh strawberries on the second and that was more popular. Perhaps a bit of lemon, or some sort of brown sugar topping?

    It was nice. I`ll keep my eye out for berry extract.

    I have never seen berry extract Janet, but it can be found online though! I bet some acidity would do a lot here, or like you said a topping. Your picture looks delicious!!

    Nice. Sorta like a strawberry shortcake all in one. I too don't think I've ever seen berry extract but then again I haven't been looking but will next time I'm at the store just to see. The extra berries are a nice idea and perhaps a dollop of fresh whipped cream. YUM!
