    **July 2018 Recipe Challenge--Sandwiches**

    Dilly! Dilly! Salmon and dill are just like peanut butter and chocolate. A match made in heaven! Add in the cucumbers and this is a light, cool, summertime sandwich. Perfect for one of those special occasion luncheons. I also think it would be good served with crackers or even on a toasted bagel. I give a word of caution to the recipe. I don’t believe you can just make it as written and expect perfect results. Be prepared to tweak! The salmon I used does not have an oily flesh. In fact, it’s known for its drier texture. It took twice as much yogurt and mayo to bind it together. No fault of the recipes. When I cooked the salmon, I made sure to season it well with salt, pepper, onion powder, and garlic powder so it would have some flavor. I used fresh dill and used the recommended 2 Tbsp. It was fantastic out of the gate and I couldn’t stop eating it. After a few hours in the fridge, the dill became overpowering. I never thought I could have too much dill. Next time I will cut the amount in half. I also think this sandwich could benefit from a slice of onion and a piece of lettuce to go along with the tomato.

    Thank you everyone! We ate the rest of it for lunch yesterday. This time we spread it on Triscuits rather than make sandwiches. OMG! It's really good! I like it even more!
