Duchess Potatoes

    Duchess Potatoes
    for the Roots and Tubers IMI11 Challenge last night.
    Basically it`s just mashed potatoes (with a bit of egg added) piped in to a pretty shape, however, it does have a different texture and therefore taste than mashed potatoes since parts of it get a little nice and crispy.

    It was fun to do and something I`d make again, especially to dress up potatoes for company.The recipe serves 10 and there`s just the two of us, so I scaled the recipe down, peeled three large potatoes and eyeballed the milk, margarine and beaten egg and it made 8 rosettes. I froze four of them on a small cookie sheet to bake another night. I think they should freeze fine.

    Nice photos, Chuckieb! Those look really good! Duchess Potatoes have been on my list of things to try for a long time. I've never made them because it seems like a lot of extra work when you are trying to put together an entire meal. Let us know how it works out to freeze them. That could be the answer to all of my time constraints.

    Thanks everyone! I think they should freeze just fine but I`ll let you know when we bake them. It`s not a big deal to throw the mashed potato mixture in a piping bag. I`ve got some big ones and a nice large tip so it wasn`t a big deal.

    FREEZER UPDATE!!! Pulled a small cookie tray full of Duchess Potatoes out of the freezer last night and put it directly in to the oven to go with some grilled steak we were making for dinner. They turned out perfectly! Crispy on the bottom, fluffy inside. I`m really pleased with this recipe. It`s going to become a go-to.

    It is fun to change up recipes especially for regular old mashed potatoes DIZ3. This really dresses them up and certainly makes them Christmas Dinner worthy. :)
