Duchess Potatoes

- 10 medium baking potatoes peeled and cut into eighths shopping list
- 1/4 cup butter shopping list
- 1/4 cup milk shopping list
- 3/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 2 large eggs lightly beaten shopping list
- 2 tablespoons butter melted shopping list
- 1 teaspoon paprika shopping list
How to make it
- Cook potatoes in boiling water to cover 15 minutes then drain and mash.
- Stir in butter, milk, salt and pepper then let cool 10 minutes and stir in eggs.
- Spoon mixture into a large decorating bag fitted with a large star tip.
- Pipe 14 rosettes onto a lightly greased baking sheet then drizzle with butter and paprika.
- Bake at 350 for 15 minutes then serve immediately.
