Duchess Potatoes Recipe
DUCHESS POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Patrick Estate in Canton, Texas in 1981.

Ingredients
  • 10 medium baking potatoes peeled and cut into eighths
  • 1/4 cup butter
  • 1/4 cup milk
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 large eggs lightly beaten
  • 2 tablespoons butter melted
  • 1 teaspoon paprika

Directions
  1. Cook potatoes in boiling water to cover 15 minutes then drain and mash.
  2. Stir in butter, milk, salt and pepper then let cool 10 minutes and stir in eggs.
  3. Spoon mixture into a large decorating bag fitted with a large star tip.
  4. Pipe 14 rosettes onto a lightly greased baking sheet then drizzle with butter and paprika.
  5. Bake at 350 for 15 minutes then serve immediately.
