Wow, this is dynamite! It tastes just like garlic bread but in soup form.
The kids didn't want to try it because of the smell, which is pungent but it doesn't taste pungent. I made the kids try it though, my son loved it as he loves garlic bread but my daughter didn't like it (I don't think she got over the smell).
My husband had seconds and I got through a small bowlful but found it very rich for some reason. I'm not sure if it's rich because of the egg, or from the bread? Perhaps I made it too garlicky! ;)
I used sliced whole wheat bread, as that's all I had at home. I made a half batch of soup which was perfect for the 4 of us. And used roughly 6-8 cloves of garlic. For the egg, I used just the yolk as I didn't want the "eggy" part of the white in the soup (or the extra sulfur as I'm sensitive to that). But it's also easier to temper just the yolk. ;) It made the soup nice and silky.
I'd love to make this again with potatoes as the thickener instead of bread. That way I can dunk some toast or crackers in my soup and not feel guilty, Lol ;)
I topped it with a tiny dollop of sour cream, parmesan and chives.

Nice pic, Shona. Glad you enjoyed it and let us know how it is with potatoes. I know I have only used it with white crusty Italian bread which is what was in the original recipe by The Urban Peasant I believe.

Great photo, Cosmicmother! Looks and sounds yummy! I would be so tempted to try it knowing it tastes like garlic bread. I'm always nervous when it comes to garlic. For me, it can get overpowering real quick.

Diz, I think this soup would be great with roasted garlic. I was thinking it would taste similar to French Onion soup that way. :)
