I Looove eggplant but was looking for something different to make other than eggplant parmesan. Was scrolling through my recipe box and found this recipe that I had made forever ago and decided to make it again :) Instead of melting the cheese in the pan I put the sandwich together minus the tomatoes and basil and melted in the oven, so the bread got a little toasty and then finished building the sandwich after it came out. The perfect lunch :-)

Thanks so much Manella! I never see the baby eggplant or Japanese eggplant in stores, which is also a smaller variety. I used to grow Japanese eggplant, and I miss it! The ones in the store are HUGE and I can usually use it for 2 meals.

I love eggplant too! I like to hide it in pasta sauce for the kids and peel the whole thing. Unless I can get the mini ones, than I don't peel it. I love moussaka but can't get the family to eat it if they see the eggplant, lol ;)
I love the idea of an eggplant sandwich and much lighter and healthier than eggplant parm! ;)

Thanks Shona! I feel like my kids would find eggplant in anything lol. They can find the smallest of things, stab it with their fork and ask what it is while making a face. I can't get away with anything :-P
