Egg's Ranchero's

    *Made for the September 2019 Breakfast Recipe Challenge*

    These ended up looking like little enchilada's in tortillas lol! So good though. I am still trying to perfect baking eggs. The yolks overcook SO quick! Mine were almost hard cooked. It really comes down to just paying close attention and continually checking them after a certain point. Regardless, a great filling breakfast!

    Thanks Janet! I had them in one of my "healthy" tortillas made with cassava flour. I heated them up over the flame on my gas stove and they got nice and crispy! Corn tortillas would be just as good :)

    Thank you Diz! Baked eggs are definitely difficult to get right, a long time ago Keni gave me a few pointers on them but I have no clue of how to find the post and can't remember what she said :(

    Linda I think lowering the oven temp.might help! I'll try that next time :)
