This is a quick way to fix eggs Mexican style... we love them!

Ingredients
  • 8 ounces salsa.. I like our local store brand... but Pace is good
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • paprika
  • 8 eggs
  • fresh ground pepper to taste
  • parsley or cilantro... I like the cilantro
  • 1 cup shredded cheese... Now we like American or Colby or a mix
  • 8 corn tortillas fried in oil until crispy not hard
  • Sour cream
  • Jalapeno slices to taste... a Texas thing!

Directions
  1. Combine salsa and seasoning in the bottom of a greased baking pan 8x8
  2. Break eggs over sauce arranging evenly .
  3. Sprinkle with pepper and paprika... looking pretty!
  4. cover and bake at 350 for 15-20 min... I like my eggs runny
  5. Sprinkle with cheese and bake 5 min or less to melt...
  6. Spoon onto the cooked tortillas
  7. top with sour cream
  8. add jalapenos to taste..
