Wow, these were GREAT!! Super easy to work with the dough, came together nicely, easy to roll out and I used a pizza cutter to cut them with. No dissolving away in the soup either while cooking which is a problem I have had in the past with normal dumplings. I don't think there is a need to cook them for 40 minutes, 20 should be fine. It would be easy to add some herbs into the dough as well, maybe some Italian seasoning? So happy I tried this recipe out, it's a keeper!!

I haven't heard of flat dumplings either! I think they are technically closer to noodles, but since they are a little thicker, they get the name dumplings :)
