    ***July Recipe Challenge--Sandwiches**

    This was a tasty gourmet grilled cheese. Lots of chopping and grating involved so it does take some effort. Guessed at the measurements. Used chopped parsley and basil for the herbs. I also added a bit of garlic to the butter. I’m glad I did because it really needed the flavor. I despise goat cheese so I omitted the Chevre. Instead, I used grated pecorino romano which is made with sheep’s milk. The instructions say to coat the buttered bread with grated Parmesan. I tried that, but found it easier to mix the cheese in with the butter and herbs and spread it on. The instructions also said to grill open faced. That seemed silly to me so I put the sandwich together and flipped it when it was golden brown. Much faster to cook 2 sandwiches at a time instead of just one. I also think it heats through quicker so you don't have to worry about it burning on the bottom.

    A lovely photo DIZ! Nice tweek to work the Parm into the butter and spread than opposed to buttering and sprinkling and too to grill as a sandwich instead of opened faced. I'm all about making it easy.
