    Four Corners Lentil Soup by Chuckieb

    What a fantastic recipe! I made this for my breakfast/lunch last week, so I halved the recipe as it was just for me. I got two big bowls for two days of meals, yum!
    It reminds me of an Indian Dal recipe, but by pureeing it you'd almost think your eating a creamy tomato soup but it has no dairy in it! And I can see this easily transformed to vegan by using olive oil and vegetable stock instead of margarine and chicken stock.
    The background flavour of ginger, garlic and cumin is highlighted by the citrus of the lemon. I think adding slices of lemon while simmering the soup is a brilliant idea! Adding some chili flakes or more cayenne would be nice if you like it more spicy, but I liked it exactly as written!
