Four Corners Lentil Soup

- 2 tbsp. margarine shopping list
- 2 large onions, chopped shopping list
- 3 heaping teaspoons of minced garlic shopping list
- 1 tbsp. minced fresh ginger shopping list
- a sprinkle of salt to your taste shopping list
- 1 heaping tbsp. ground cumin shopping list
- 1/4 tsp. cayenne pepper shopping list
- 15 oz. canned whole tomatoes (I used San Marzano) shopping list
- 3 slices of lemon, no seeds shopping list
- 1 cup red lentils shopping list
- 4 cups chicken broth (I use home made) shopping list
- Fresh coriander to garnish shopping list
How to make it
- Heat the margarine in a large pot.
- Add onions, garlic and ginger and saute for 5 minutes until soft.
- Add a pinch of salt, the cumin, and the cayenne and stir for another minute or so, until fragrant.
- Add the tomatoes, lemon slices and the lentils.
- Then add the broth and stir well.
- Cover the pot and bring the mixture to a boil.
- Reduce heat and simmer for about 30 minutes, until the lentils are soft.
- Remove the lemon slices and puree using a stick blender until smooth. If you find it is too thick, (as I did), add another cup of chicken broth.
- Ladle into bowls and garnish with fresh coriander.

What a lovely soup, so delicious!
By pureeing the lentils you'd think you're eating a creamy tomato soup without the cream! I love all the flavours in this, and simmering it with the lemon slices is such a brilliant idea!
