Ingredients

How to make it

  • Heat the margarine in a large pot.
  • Add onions, garlic and ginger and saute for 5 minutes until soft.
  • Add a pinch of salt, the cumin, and the cayenne and stir for another minute or so, until fragrant.
  • Add the tomatoes, lemon slices and the lentils.
  • Then add the broth and stir well.
  • Cover the pot and bring the mixture to a boil.
  • Reduce heat and simmer for about 30 minutes, until the lentils are soft.
  • Remove the lemon slices and puree using a stick blender until smooth. If you find it is too thick, (as I did), add another cup of chicken broth.
  • Ladle into bowls and garnish with fresh coriander.

    What a lovely soup, so delicious!
    By pureeing the lentils you'd think you're eating a creamy tomato soup without the cream! I love all the flavours in this, and simmering it with the lemon slices is such a brilliant idea!
