    Garlic Parmesan Orzo
    for dinner last night to accompany
    Italian Chicken Escalopes With Wine And Lemon
    It went VERY well.
    I don't use Orzo a lot but I had a jar of it in the pantry and thought pasta would be a nice accompaniment to the chicken dish.
    Hubby was lured out to the kitchen with the smell of the butter and garlic cooking. :)
    I like this recipe a lot. I like it because you can precook your Orzo and then just put it together quickly right before the meal. It has a lot of flavour and as someone else on another IMI review commented "It's like a grown up's Mac 'n Cheese".
    The recipe serves 8 and there's just two of us. Initially I was going to quarter the recipe but 1/2 cup orzo seemed like such a small amount. So I ended up just halving the recipe but indeed, it would serve four no problem. LOL. No issue. The leftovers will be delish.
    Easy, and tasty, and fancy enough to serve to company. I'll certainly make this again. Thanks Corinne!
