    Gingerbread Pancakes by Crossfire

    This smells just like gingerbread cookies while cooking, and tastes just like a soft gingerbread cake. This would be so nice for a holiday brunch or Christmas morning breakfast. It was perfect with maple syrup and a touch of whipped cream. But I can see serving it with vanilla ice cream, maple walnut ice cream or lemon sauce etc. as a dessert pancake.
    I like that it uses a bit of whole wheat flour, and applesauce instead of all oil. They are moist, chewy from the molasses, and a little more dense than a standard fluffy pancake--but that just made them more filling and satisfying. Not an everyday pancake but certainly delicious and fun to try. :)

    For little kids, this would be so cute shaped like gingerbread men...chocolate chips for the eyes and/or buttons etc..;)
    There are a few gingerbread pancake recipes on here, they all look good it was hard to choose one!
