Gingerbread Pancakes

- 1 3/4 cups flour shopping list
- 1/2 cup whole wheat flour shopping list
- 1 1/2 tsp baking powder shopping list
- 1 1/2 tsp pumpkin pie spice shopping list
- 1/2 tsp ginger shopping list
- 1/4 tsp soda shopping list
- 1/4 tsp salt shopping list
- 1 1/4 cups skim milk shopping list
- 3/4 cup applesauce shopping list
- 1/3 cup molasses shopping list
- 1/4 cup cooking oil shopping list
- 1 egg shopping list
- softened butter shopping list
How to make it
- in mixing bowl stir together flours, powder, pie spice, ginger, soda and salt. Make a well in the center of the flour mixture, set aside.
- In another mixing bowl, whisk together milk, applesauce, molasses, oil, and egg. Add milk mixture all at once to flour mixture. stir....batter will be lumpy.
- Spoon about 1/4 cup batter onto hot griddle. Cook over medium heat about 3 minutes, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.
- serve with softened butter and syrup.

It smells and tastes just like a gingerbread cookie! Perfect with maple syrup and a touch of whipped cream.
I got 16 pancakes using a 1/4 cup measure.
