How to make it

  • in mixing bowl stir together flours, powder, pie spice, ginger, soda and salt. Make a well in the center of the flour mixture, set aside.
  • In another mixing bowl, whisk together milk, applesauce, molasses, oil, and egg. Add milk mixture all at once to flour mixture. stir....batter will be lumpy.
  • Spoon about 1/4 cup batter onto hot griddle. Cook over medium heat about 3 minutes, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.
  • serve with softened butter and syrup.

    It smells and tastes just like a gingerbread cookie! Perfect with maple syrup and a touch of whipped cream.
    I got 16 pancakes using a 1/4 cup measure.
