    I just finished eating this for a quick supper. Loved it! I love fresh tomatoes with pasta, but my son does not so it worked perfectly that he's away tonight. Gnocchi is my all time favorite comfort food. I usually eat it with a tomato cream sauce or pesto cream sauce, so this was new to me. I loved the bacon in this, so it's now a close tie as my favorite gnocchi dish! And the best thing is, it's a dairy free sauce!
    I did add a clove of garlic along with the onions, just 'cause I love garlic ;) And topped it with romano cheese. My tummy is very happy right now! :D

    Karen, It might be the brand? The packaged ones on the shelf can be hard or chewy because of the preservatives. I like to get the frozen ones as they are packaged fresh, but not every store carries it. As soon as they float to the top, then I scoop them out of the water and serve immediately. So it's better to have your sauce ready and wait for the gnocchi as they only take a couple minutes to cook, overcooking can make them heavy or mushy too.
    They are easy to make from scratch and I use to make large batches and freeze them but I haven't done that in a couple years! I really should do that soon. Manella has a recipe: Gnocchi Di Patate Potatoe Dumplings

    Karen, I always use the package on the shelf kind, but I always buy them from the same place, World Market, and they have about 5 different kinds and they always come out pillowy soft :)

    Karen_B--I tried making gnocchi once and decided it's easier to buy it. lol! There are 2 different kinds of gnocchi, potato gnocchi and cheese gnocchi. I prefer the cheese because it's richer. The grocery stores usually just have potato and I find that it's chewy and not as good. Might just be my cooking. Like Mommyluvs2cook, I also shop at World Market and they have several different kinds including cheese gnocchi.

    Michelle, your directions were spot on. I free poured the chicken stock and cooking water until the sauce thickened. I might have used too much liquid because it was quite saucy, but it boiled down in seconds. :)

    Olivieri came out with gnocchi in the fresh pasta area, I haven't tried that brand yet. I've had some pretty bad ones that were in vacuum sealed tray-pouches in the dry pasta area. They had a weird tang to them which I attributed to the preservatives and they always seemed mushy to me. The dry packed Vita Sana brand in the 1 kg bags seem ok to me though :)
