LOL!! I couldn't resist … it is a sandwich, right? Made for IMI2's July Sandwich challenge.

Nice little treat! that tastes close enough to an ice cream sandwich except with a fraction of the calories, fat, and sugar

Just seeing this post made my day! :) Neat idea to use whipped cream. Did you freeze yours? I don't see where the recipe says to freeze, but I would think they would be easier to eat if they were frozen.

Finally got around to making these. Grahams were not as soft as the sandwiches I remember so I left a package of them open overnight. That was enough to soften the crackers up nicely. Made the filling out of Philadelphia Cheesecake filling. Great little icecream sandwich, although it did spike my blood-sugar readings.
