Grandad's Smoked Bacon and Lentil Soup

    Grandads Smoked Bacon And Lentil Soup by DonSpain

    This is excellent! It totally exceeded my expectations! I've never had lentils with cabbage before so I wasn't sure what to expect. But the bacon, red lentils, onion, leeks, cabbage, carrot etc. went so well together and was very delicious!
    I knew if I completely pureed the soup the kids would be more apt to eat it, so I pureed it with my immersion blender to a very smooth consistency. Instead of topping it with parsley I topped with green onions; and for the photo I used a few bacon bits--but all the bacon called for in the recipe is pureed into the soup. It made for a silky mouth feel you'd almost think you're eating a creamy soup. It was very comforting, like a warm blanket, and very satisfying.
    The whole family loved it! Thankfully I doubled the recipe and my son and I enjoyed the leftovers for lunch. My son especially loved it so I think this is his new favorite comfort food! Thanks Don!

    Beautiful bowl of soup Shona! Red lentils break down much more than other lentils so pureeing it all was a great idea. I can see eating a grilled cheese sandwich and this soup on a cold wintery day.
