Grandad’s Smoked Bacon And Lentil Soup

- 1oz butter shopping list
- 150g/5oz smoked streaky bacon - chopped shopping list
- 1 Onion - chopped shopping list
- 1 carrot - finely sliced shopping list
- 1 Leek - finely sliced shopping list
- ¼ head small cabbage - shredded shopping list
- 150g/5oz Red Lentils shopping list
- 450ml/1pint chicken stock shopping list
- Freshly Ground black pepper shopping list
- Garnish: Flat Leaf Parsley - roughly chopped shopping list
How to make it
- Melt butter, add bacon and fry gently for some 2 to 3 minutes or so until golden but not crisp;
- Add onion, carrot, leek and fry gently for some 8 minutes or so to soften a bit;
- Add lentils, cabbage and stock, bring to boil and simmer, stirring occasionally, for some 15 to 20 minutes or so or until everything is tender but the lentils are still whole, not mushy;
- Then you can choose: Serve whole with veg intact or Remove from heat and “Blitz” with blender;
- Return to heat, season with pepper and serve;
- Garnish with parsley.
