    **Made for the February 2021 Recipe Challenge: Soups & Stews**

    I hit the bottom of the freezer. What to do with oxtail other than make a stew. This is one of the best stews I have ever made. It has a deep “meaty” flavor and it’s very rich. The recipe is not without flaws. First, oxtail is not listed as an ingredient. There are ingredients listed that are not in the instructions and ingredients in the instructions that are not listed.

    I had a 4lb package of oxtail and followed the instructions as best as possible. I used a mix of leeks and onions because I had leeks that I wanted to use. I only used half the amount of potatoes and carrots. My bag of carrots are extra sweet and have been putting too much “sweet” into recipes. I also added a few peas because beef stew has to have peas, in my opinion. No cayenne for me. It didn’t say whether or not to cover the pot. I covered it and simmered for 5hrs. Then I pulled the meat from the bone, added the potatoes, carrots, and peas and left it uncovered until the vegetables were cooked through.

    I can't say I have ever tried oxtail stew, but you sure do make it look and sound good!
    I agree, beef stew has to have peas. ;)

    Thank you, Cosmicmother! My interests in cooking have changed. I stick to a pretty strict "grain free" diet. My husband has chosen a low carb diet. I find keto recipes fit our new lifestyle. I've tried alternatives like almond flour and coconut flour, but we just do not like it so we do without breads and desserts. Having said that, we are having pizza today. lol! It was a "planned" event.

    I'm sure my mother cooked oxtail because we raised our own beef when I was growing up. This was my first experience. It's different and more work than I bargained for. As Pointsevenout mentions, it is very fatty. I skimmed a lot of fat off of the top. The end result was worth it. Oxtail would also be good if you just wanted to make beef stock.

    Hi, Pointsevenout! This was my first experience with oxtail. They looked meatier than they were. You are right, lots of fat! Too much for me! I trimmed it the best I could before I put it in the pot. When it started to fall off of the bone, I put on rubber gloves and separated the meat from the fat as best I could. I skimmed a ton of fat off of the top. I find the easiest way to do that is to let it cool and refrigerator overnight. The fat sets up on top and lifts right off. I told my husband that I probably wouldn't be cooking oxtail again. After we tried it, I've changed my mind.

    Diz, I totally understand about the different diets and having to find specific recipes for it. It makes it hard to find recipes on here or get into trying new things! Lol, at least you can still treat yourself to pizza now and again! :)

    Thank you, Mommyluvs2cook! It doesn't seem like it's been that long ago since I posted. I guess it has been well over a year. About the time that I had issues with my achilles and couldn't put any weight on my leg. My hubby had to do all of the cooking for a couple of months.

    Beautiful photo DIZ, i have made oxtails in the past, many, many years ago when we lived out west. Your right about the jellied fat, i did the same cooked one day left it over night in the fridge and scrapped all the next day. I put potatoes,carrots, peas and corn in mine. Now i have to look to see if the stores here carry them. Saved it:))

    Thank you, Manella! I've read that the best stocks are supposed to turn to jelly because it pulls the collagen from the bones. Good nutrition as I understand it. I didn't have high hopes for the stew. It is the best tasting stew I've ever made! I'm still patting myself on the back. lol! I only had the one package of oxtail. I do have some meaty neck bones in the freezer. I think I'm going to make this again using those and see if I can get similar results.
