    Guacamole Grilled Cheese Sandwich

    for lunch today (and the IMI 11 July Sandwich Challenge). It`s DIVINE. Love the fresh flavours. I followed the recipe to a `t` pretty much. Used regular sized brown sandwich bread. I only used one avocado as opposed to the two that are called for in the recipe and I`m glad I did as I don`t know how you can fit two mashed avocados in between four slices of bread! I`d like to try this as a panini one day using a bigger bun or roll.

    I didn`t have a green onion but subbed some shallot instead. I also didn`t have cheddar cheese but I did have some Maple mustard cheese (it`s not sweet) and used that instead. I LOVE the garlic in this and I used a jalopeno pepper from my garden (the first one harvested!) and loved the little bit of heat that that added.

    The avocado mixture is wonderful and as Michelle said in a past review, make extra so you have some on hand for chips.

    I`ll totally make this recipe again. Something a little different. Hubby gave it thumbs up too. Thanks Joce for a very yummy sandwich recipe!!!!

    My BIL and SIL gave it to us as part of a Hostess Gift recently. You can`t really taste maple (for which I`m thankful) and then there are mustard seeds throughout it which is kind of neat.

    Very nice photo, Chuckieb! What an interesting sandwich made even more interesting by the maple mustard cheese. A new twist on a grilled cheese. I saved the recipe. I know this is something my hubby would really enjoy. Me, too, except hold the jalapenos.
