    LOVED, LOVED, LOVED this! Hubby likes anything with pineapple and mandarin oranges, but I was skeptical about the coconut. He’ll eat it, but it is not something that makes his favorites list. He loved it! Said he could eat the entire bowl! I did not add the red onion as I wanted to see how the other flavors went together. It’s so tropically sweet and creamy that, personally, I wouldn’t add the red onion. What I would do next time is throw in a few chopped pecans. :)

    I did make a major adjustment in the ratio of cabbage to mayonnaise because I do not like coleslaw that is smothered in mayonnaise. Not going to fault the recipe. I’ve made dozens of coleslaw recipes and always find they use an overwhelming amount of mayonnaise. That is just how coleslaw is made, I guess. I used a 16oz pkg of coleslaw mix which amounts to about 10 cups of coleslaw. (When I measure coleslaw, I do not pack the measuring cup. Just dump it in loose.) Then I cut the amount of dressing in half. Kept the amount of fruit the same and added a handful of coconut. Refrigerated for a couple of hours before dinner. Perfect for our tastes and was plenty creamy.

    P.S. I'm happy that I got 2 pkgs of coleslaw because this didn't last long. Going to make another batch to go with the Kalua Pig.

    Beautiful photo DIZ! and what a fun looking recipe. I'm going to have to try this one except I would add the onion to balance it, plus I like onion. I bet this would be ideal to bring to a pot-luck or BBQ because it's so different.

    That looks beautiful and delicious! I love Ambrosia salad (I'm making some tomorrow) but never thought to mix the same flavours with coleslaw before! I'm glad you tried this because I think I'd be too chicken to try it, Lol! But if you loved it that much I might just have to try it! :D

    Thank you, Cosmicmother! I'm so glad you mentioned Ambrosia. When I was writing the review, I was trying to come up with the salad that it tastes like. My mind was at a loss because I couldn't for the life of me think of the name. Yes, this tastes just like Ambrosia!
