    ***January Muffin Challenge**

    “For the 10th time…..NO! I DID NOT put molasses in the muffins!” I can’t seem to convince hubby of that. I can’t blame him for thinking it though. They do have a dark molasses color and taste like a molasses cookie. Yummy! And moist, too! I was so impressed by these that I even made a second batch since I had an extra overripe banana. FYI-- I used King Aurther’s white whole wheat flour.

    There is a “Whoops!” in this recipe. It doesn’t call for any leavening agents. I didn’t realize that until I mixed in the dry ingredients and thought I made the mistake. Read through the great reviews and only a couple mention adding baking powder. I wanted to try it as written, but my inner voice said not to take the chance and waste a bunch of ingredients. I added 1tsp. baking powder & 1 tsp. baking soda. Also added a handful of golden raisins. I divided the batter evenly between 12 muffin cups and found the baking time spot on. Mmm! A moist, dense muffin! With the second batch, I used 2 tsp. baking powder. I felt the baking powder changed the texture to more of a standard muffin crumb, but hubby and I both agreed the texture was dry by comparison with a slight aftertaste. So I’ll stick with the combination of baking soda and baking powder.

    Great looking muffins, DIZ! Don't ya hate when there are ingredients or instructions missing?! I'm eyeing another muffin recipe to make for this month's challenege, but there seems to be no dairy in the ingredients list or directions. I left a note for the submitter on the recipe page, but haven't heard anything back, and I don't know enough about baking science (as in nothing!) to know if the recipe will work without it :p

    I agree with you Bakerme about people leaving something out from a recipe. Though I have tried several recipes as written thinking that it would not work and it surprised me and did.

    Thank you, everyone! Bakerme, usually it's me that messes up recipes because I don't read the directions. Then when it doesn't turn out, I go back and look and go, "oops!"
