How to make it

  • Pre-heat oven to 325 degrees
  • Place first 6 ingredients (until salt) in blender or food processor and blend until fine.
  • Stir all remaining ingredients together until well combined.
  • Add dry ingredients and stir until moist.
  • Pour into muffin tins and bake for 25 minutes or until just firm on top.
  • Cool. YUM

    Whoops! Where's the baking powder? I wanted make as written, but went with my better judgment and added 1tsp. baking powder & 1 tsp. baking soda. A fantastic muffin and one I will make again. See more in IMI II Reviews.

    It's the second morning making these with my kids. They ate them all up yesterday. I changed a few things, instead of flax seeds used ground chia seeds and only used 1/2 cup grated carrot and added 1/2 cup apple sauce. They were very good! I think I will take the advise of Sweetpea1813 and add baking powder so they will rise a bit more :)

    These were great. I made a few tweaks. I didn't have cloves, so I omitted them. I added 1/4 cup of bran instead of flax seed. I added 2 tsp baking powder (I was worried they wouldn't rise otherwise), which made them nice and fluffy. I only cooked them for 20 minutes on 375 degrees (the recipe made a dozen). Next time I'll add nuts!

    I just made these muffins to take on a plane trip and half of them disappeared by way of friends and family before I could even get them to a container :) And I'm sure the rest will far surpass regular airplane fare.

    I doubled the recipe and it made 15 fantastic muffins.
