Healthy Carrot Banana Muffins Recipe
Delicious, moist, healthy muffins. Great for a snack.

Ingredients
  • 3/4 cups whole wheat flour
  • 1/4 cup oats
  • 2 Tbsp flax seed
  • 1 teaspoon cinnamon
  • 1/2 teaspoon each: allspice and cloves
  • 1/2 tsp salt
  • 3/4 cup sugar (can substitute half with low cal sweetner)
  • 1/4 cup canola or olive oil
  • 1 mashed ripe banana
  • 2 large eggs lightly beaten
  • 1 1/4 cups grated carrot
  • 1/2 cup raisins (optional

Directions
  1. Pre-heat oven to 325 degrees
  2. Place first 6 ingredients (until salt) in blender or food processor and blend until fine.
  3. Stir all remaining ingredients together until well combined.
  4. Add dry ingredients and stir until moist.
  5. Pour into muffin tins and bake for 25 minutes or until just firm on top.
  6. Cool. YUM

Delicious!!!
I just made these muffins to take on a plane trip and half of them disappeared by way of friends and family before I could even get them to a container :) And I'm sure the rest will far surpass regular airplane fare.

I doubled the recipe and it made 15 fantastic muffins.

Alterations


Try adding chocolate chips, it's delicious! ...and still healthy :)

I also used only a little bit of white sugar, some brown sugar, and some honey to taste.
