Totally in love with this recipe!! I almost ended up just grilling my chops, but decided to go forth with this recipe last minute and SO glad I did :) Instead of currants I used golden raisins. I am just now becoming a fan of raisins (cooked only) after hating them my whole life. They cooked down to be super soft and tender and did not have the horrible texture of a raw raisin. I also just felt the urge to add some chopped rosemary, just because, and I think it was a great addition, but would be just as good without. So happy I found this recipe, can't wait to make it again :-D

This looks awesome, Mommyluvs2cook! Definitely something we would like. I have a similar recipe that uses honey and walnuts. I really like the idea of golden raisins. I have a love-hate relationship with raisins. I like them in somethings and HATE them in others.

Love the photo Michelle! Too funny that you hate "raw" raisins that much but happy you are liking them in recipes. Nice combo of sweet and savory.

That looks so good Michelle, great photo! I could eat that over pork chops and apple sauce any day!! ;)
Good call on adding rosemary to it! I think thyme would go well too, as well as fennel or anise seeds! So many possibilities! Great recipe find, bookmarking! :D

Thanks everyone! Lol, I don't think you would really call them "raw", but hey, what I mean is I don't like to eat them straight out of the box or in a trail mix or something :P Y'all know what I mean! I actually thought about adding thyme Shona, but I didn't want to keep adding things and change up the recipe too much, but next time..... :)
