Honey Glazed Carrots

    *Made for December's "Christmas Festive Dish" Recipe Challenge"

    We absolutely LOVED these carrots!! I don't make honey/sugar carrots very often. I halved the recipe and you definitely need the amount of chicken stock stated (1/2 cup for 1/2 the recipe). I was thinking it wouldn't evaporate enough before the carrots were done, but it did! I left the honey at 1 tsp, and I may have even added a bit more, just eyeballed. The thyme is perfect in this, and everyone inhaled them :) Served with porkchops and mac and cheese :)

    I wasn't really sure what would fall under that category either! But I think this would make a great side dish for Christmas dinner, so I think it counts! :D

    I made this as a last minute side dish to our turkey dinner and it was delicious! I didn't have any runny honey so I used maple syrup. And like Michelle did with the honey I used more maple syrup. I think the poster probably meant a Tablespoon instead of a Teaspoon of honey?

    Yay Shona, glad you liked them! I agree, I think the submitter had meant a different measurement for the honey, as a tsp. doesn't really do much for a lb. of carrots, especially if "Honey" is in the title. I think maple syrup was a great sub, I gotta try them that way!
