    I wish I could have got a better photo, it doesn't look green in the photo but it is a pale mint green. And you can't see the mini chocolate chips but they are in there!
    My daughter loved these!!! She polished off a half dozen before I had to hide them on her, Lol. She loves mint-chocolate chip ice cream, but has to have a lactase pill. But she can enjoy these and have that ice cream taste with no dairy! She thought they tasted just like the ice cream too! :D
    There was an omission or missed step in the directions. Where it says beat to soft peaks it should say stiff peaks. Perhaps it was meant to say beat to stiff peaks after adding the food colouring and mint extract. In any event, you'll want to beat it until it's stiff and glossy before baking. I had to fit them on 3 baking sheets, 2 large and one small, so you'll want to make sure you can fit that many in your oven!
    I used 6 drops of green food coloring instead of 4, and I think I could of added a little more. And my mint extract was pourable so I couldn't add 4 drops-- I used a 1/4 tsp--which worked out perfectly and not overpowering at all.
    I weighed the mini chocolate chips, 6oz's worked out to one cup. (I had a 300gram/10oz bag)
    I was worried the 375F oven would turn the meringues a little dark (even though you turn the heat off right after)-- so to avoid possible discoloration I baked them at 200F for one hour. And turned off the heat and let them sit in the oven for 2 hours to dry out. (I live in an extremely dry part of the country so in humid areas you might have to let them sit for 8-12 hours. The best way to check is to try one from the oven--I like them crisp on the outside and chewy-soft in the center) I have a newer oven that stays quite hot, so that's why I didn't want to risk the 375F oven.
    Another option would be to leave out the mini chocolate chips and pipe out the meringues. Then after cooling dip the bottoms in melted chocolate. :)

    Yes! Like candy cane meringues....I could serve them to my Sister-in-law at Christmas time since she's allergic to gluten. She rarely gets a cookie or dessert as she's also dairy intolerant (I use Enjoy Life brand choco-chips, dairy/gluten/Nut free and they are mini-chips). Perfect for allergies! :)

    We have tons of gluten and dairy allergies in my family (and also among our Iranian friends - I think that is because one Iranian friend changed her diet and cancelled her bowel surgery after meeting me, and she introduced me to another Iranian lady who also had digestive problems).     I haven't tried desserts with rose before, always wanted too! I watched a Martha Stewart baking show awhile back where she made Iranian/Persian cookies. One uses rice flour, a pretty date filled cookie and a sesame seed-tahini cookie. I will have to venture out more in my baking!

    Well, I know my friends love those coconut macaroons. I have made them many times. The funny thing about living in Iran is that people always buy their baked goods at a bakery. No kidding, people were actually storing dishes in their ovens because they never used them (It makes sense if you consider the cupboards are made of metal and marble instead of wood and plastic). I bought myself a toaster oven and had to explain to my in-laws how it worked. If you ever go to an Iranian bakery, the walnut-flour cookies are the best.     I should have cracked one open so you could see the inside, but the outside is brittle and it wouldn't look pretty.....as I forgot to mention that the inside is far more green! The drier it gets on the outside the more the colour dissipates. :)
