How to make it

  • Preheat oven to 375 degrees.
  • Prepare 2 cookie sheets (grease and lightly flour).
  • Beat egg whites, cream of tartar and salt until eggs are foamy.
  • Add sugar 2 tablespoons at a time, beating after each addition.
  • Beat until soft peaks form.
  • Sitr in food coloring and mint extract.
  • Fold in the chocolate chips.
  • Drop by teaspoonfuls onto the prepared cookie sheets, keeping them 1 inch apart.
  • Place in preheated oven and turn off heat.
  • Let set in oven at least 8 hours or up to 12 hours.

    Delicious, and tastes just like Mint-Chocolate Chip ice cream!

    There was an omission or missed step in the directions. Where is says beat to soft peaks it should say stiff peaks. Perhaps it was meant to say beat to stiff peaks after adding the food colouring and mint extract. In any event, you'll want to beat it until it's stiff and glossy before baking. I fit it on 3 baking sheets, 2 large and one small, so you'll want to make sure you can fit that many in your oven!
    I used 6 drops of green food coloring, and I think I could of added a little more. And my mint extract was pourable, so I only used 1/4 tsp, which was perfect. I weighed the mini chocolate chips, 6oz worked out to 1 cup. (I had a 300gram/10oz bag)
