Italian Chicken Escalopes

    Italian Chicken Escalopes With Wine And Lemon
    recipe recently and made it last night for dinner. Firstly I had to google what an Escalope was as I wasn't familiar with the term. Turns out Escalope is a thin piece of meat without any bone. Word of the day. :)

    I used four boneless skinless chicken thighs and pounded them thin with my meat pounder. I used a Chilean Chardonnay and fresh squeezed lemon juice.

    These cook up very quickly and were super tender and juicy. This would be a lovely summer meal out on the back deck.

    Curious to know what Don usually serves it with? I decided to try yet another new recipe to go with it....
    Garlic Parmesan Orzo
    which went very nicely. The 'sweetness' of the pasta and parm balanced nicely with the tartness of the lemon in the chicken escalopes.
    Also served a plate of fresh tomato slices sprinkled with fresh ground pepper, black lava sea salt, drizzled with olive oil and topped with fresh basil.

    This would make a nice easy yet elegant meal for guests. Both hubby and I enjoyed it and I'll certainly make it again. Thanks Don!
