    ***July 2019 Group Recipe Challenge: Tomatoes***

    I had a bunch of cherry tomatoes to use so I decided to try this. I was a bit skeptical at first. Would the tomatoes be too weird? Would it be too salty? Would the brown sugar make it too sweet? This was pretty awesome! I would highly recommend doubling the sauce, especially if you are serving over rice. I doubled it and even doubled, there wasn't much sauce. The tomatoes were not weird at all. It was salty and I would recommend omitting the salt and/or using low sodium soy sauce. I used Tamari--the Japanese version of soy sauce. I also subbed sesame oil for the vegetable oil because it adds so much flavor to Asian cooking. Personally, I felt it could use a more sugar to give it a sweet Teriyaki taste. Hubby thought it was just fine and gave it two thumbs up. Will definitely make again!

    Beautiful presentation and picture DIZ! Who would ever think to use tomato in a stir fry recipe but it looks like it worked well. Good idea to sub the regular oil with sesame oil.

    Thank you, LindaLMT! The tomatoes were very good. Hubby liked the dish because of the tomatoes. Now that I think about it, this is basically the same as another dish I make quite often: Slow Cooked Pepper Steak. I like the stir fry better!
