Leek and Garlic Mashed Potatoes

    Leek And Garlic Mashed Potatoes by Bren

    I knew I would love this! It's delicious all on it's own, you really don't need any gravy with it.
    I veered from the instructions, only by accident, Lol...I forgot to cook the leeks first and started boiling the potatoes. So I sautéed the leeks in a separate pan with a little olive oil. I put 2 cloves of garlic in with the boiling potatoes and sautéed 2 more with the leeks. I didn't use all 6 as my garlic cloves were giant!
    After mashing the potatoes with a masher, not an immersion blender, I just stirred in the leek mixture rather than pureeing it all. It still worked out fantastic!
    I could see this mixture making excellent twice-baked potatoes, with a little bacon and melted cheese. Yum!
    It looks just like it is, a bowl of mashed potatoes-- but it's delicious! And I will definitely make it again. :)

    Great photo, Cosmicmother! Looks and sounds yummy! I like anything that uses leeks. The secret ingredient that makes everything better. :) Imagine if it had a turnip mashed up with it. It would really be over the top!

    Looks so good Shona, and I think my family would like these! They aren't into much extra stuff being added into their mashed potatoes, so I think I can get away with making these :) :)

    Thanks Michelle, my kids devoured this and had seconds...I don't think they knew anything else was in it, but they said it tasted awesome! ;)
