Leek And Garlic Mashed Potatoes

- 1 pound potatoes, about 5-6 med. shopping list
- 1 large leek, white part and pale green part only. Finely chopped, about 2 1/2 cups shopping list
- 6 large cloves garlic, cut in half shopping list
- 3-4 tbs butter, I use Earth Balance\ shopping list
How to make it
- Cut the end off of the leek and chop.
- Rinse well and drain in a colander.
- Melt the butter in a pot, add leek. Med-high.
- Stir and put the lid on.
- Cook for about 10 mins, stirring occasionally.
- When leek is soft, remove from pot and set aside.
- Boil sliced potatoes and garlic in lightly salted water until tender.
- Drain well in a colander.
- Place the leeks in the pot and using an emersion blender, blend until smooth.
- Add the potatoes, use the emersion blender to mash. Do not over blend.
- Or Mash with a potato masher.
- * next time roast the garlic.

Never knew leeks and mashed potatoes could go together so nicely. Great flavor and very tasty, and a very nice side dish with salmon cakes and a green salad. Thank you Bren for the recipe.

This potato and leek combination along with the garlic was excellent and received a big thumbs up from the taste tester…aka Hubby… he says that we should make these for Christmas to go with the Turkey…I laugh at the "we" part…aka me...more
