Lemon Cheesecake Bars

    These are great! I used an 8x8 pan and that is what I would recommend. Although there is plenty of crust/topping for a 9x13, there is no way the cheesecake filling would cover it or if it did, it would be a VERY thin layer. I did not use all of the crust/topping, there was a lot! We couldn't really taste the lemon, so I would at least double up on the juice or even triple. They cut up nicely and have a great cheesecake taste though!! Everyone enjoyed them, and would make them again definitely, with more lemon :) :)

    I'd like more filling too and doubling up on the filling for a 9x13 sounds like a good idea!
    You just need to add more zest to give it extra lemon flavour. The juice adds tartness but all the lemon flavor is in the peel! :D
