    ***October 2019 Group Recipe Challenge: Orange Ingredients***

    Geez! I have been wanting to make this recipe for months now and it never happens. Made this for the “orange” ingredient recipe challenge. Orange ingredient--colby cheese. This was very good and I will make it again. However, it was kind of bland and seemed like it was missing something. We ended up topping it with sour cream and salsa, but I’m thinking it needs something more like green chiles or jalapenos. Perhaps I forgot an ingredient. The ingredients are not listed in order and I was going back and forth trying to make sure everything was accounted for. The marinade is a very thick paste and it was somewhat of a challenge to toss and coat the chicken. We don’t care for cumin so I reduced the amount to 1 teaspoon instead of a tablespoon as suggested. That was perfect for us. I don’t like to bake chicken breasts at 400 degrees so I reduced the oven temperature down to 350. Baked uncovered for approximately 35 minutes. Then topped with cheese and returned to the oven for another 5 minutes until the cheese was melted. The chicken breasts were moist and tender. Even hubby complimented the chicken for being moist. The aroma was awesome when these were baking. It smelled like I was making a pot of chili.

    Thank you, Mommyluvs2cook! Cheese is orange! He!He! :) Yes, more salt and even more pepper. I didn't use cayenne, but that's a bit too hot for me.

    Your picture looks delicious DIZ! I see the recipe doesn't note to marinate for any length of time so the rub wouldn't have time to sink in to the chicken and flavor it. Maybe that's why it was bland? I can see this being great with shredded rotisserie chicken in a baking dish.

    Thank you, LindaLMT! I don't know if marinating would help or not. I'm sure it wouldn't hurt. I like your idea of using shredded rotisserie chicken. That would be easy, peasy and make a tasty meal.
