    Malaysian Lentil Salad

    My review: I really wanted to like this salad more than I did. I like the looks of the ingredients but it needs some tweaks.
    Their was too much dressing and the apple cider vinegar was much too strong and I could barely taste any of the spices.
    I too felt it needed something more so I added frozen baby spinach leaves. I keep a container of fresh baby spinach in the freezer and find that it doesn't need to be cooked when adding it to dishes, it wilts beautifully and thaws quickly and isn't water-logged like the stuff you buy in the freezer section.
    If I was to tweak the recipe I would add an additional 1/4 cup of pasta and an additional 1/3 cup of lentils to better balance the ratio of salad to dressing. Not sure if I would use less vinegar or another variety.
    (p.s. I only had brown lentils and used them)

    Well that's a shame that you didn't enjoy it as much as you thought you would Linda. It sure is a lovely looking salad. The baby spinach addition looks like a good one and gives the salad some colour. That's very cool you keep the fresh spinach leaves in the freezer! I've never heard of that and it's great to know it works as I use spinach in a lot of soup recipes.

    I love frozen baby spinach, so much better than the frozen bricks you have to thaw and drain! ;) I also have a big bag of chopped frozen kale. Both are so easy to add to soups and smoothies etc..
