Malaysian Lentil Salad Recipe
Delicioius as a side or on it's own. I like it room temp but cold is good too. The dressing can be tedious to put together, so I usually mix up a double (or trible batch) and save the rest in the fridge to add to the lentils and rice later.

Ingredients
  • Dressing: 1/4 cup apple cider vinegar
  • 1/3 cup olive oil
  • 1 tsp dijon mustard
  • 1 tsp cumin
  • 1/2 tsp each of sugar, salt, coriander
  • 1/4 tsp each of tumeric, paprika, nutmeg and cardamum
  • pinch of cinammon, cloves and cayenne
  • 2/3 cup cooked green lentils
  • 1/2 cup orzo pasta
  • 1/4 cup chopped red onion

Directions
  1. Mix Dressing Ingredients
  2. Chop onion
  3. Mix onion, pasta and lentils with dressing
  4. Refrigerate to allow flavours to meld.
  5. Enjoy!
