Meatball Soup

    Always on the lookout for a good soup and this fits.I used half beef hamburger and half ground pork, added gluten free oatmeal to hold it together.Also added fresh basil, parsley and rosemary from my herb garden.I make my own broth so I used that rather then water.
    Love the fact that you can add to this so I did, carrots and celery.The changes I made did not change the fact that this is a delicious soup.

    The best change anyone ever did to the recipe IMHO was Michelle, who added a Parm rind to the soup as it was cooking. Ever since she mentioned that I've done it every single time and it just wouldn't be as good without it now. LOL!

    Chuckieb, my mom always put a parm rind in her soup and so did i, and it' s delicious.
    I don't anymore since now i have a dairy intolerance, so no more good stuff:)

    I can't even remember where I found the parmesan rind idea, it was so long ago! I think it may have been on a cooking show lol, it's a nice way to use something up that most people throw away though!
