How to make it

  • Mix ground beef, garlic, parsley, marjoram, basil, onion powder, salt, pepper and egg together. Shape into teeny meatballs and roll them in flour to lightly coat.
  • Bring the beef bouillon, water, tomatoes, tomato paste and bay leaf to a boil in a large pot.
  • Add the meatballs and the rice. cover and simmer for 45 minutes. Serve with a nice crusty bread! Mmmmm.......

    Always on the lookout for a good soup, and this is one that fits.I used half beef hamburger and half ground pork, added gluten free oatmeal to the mixture to hold it together. Also added fresh basil, parsley and some rosemary from my herb garden. I make my own broth so i used that rather then water. Love the fact that you can add to this so i did. Carrots and celery.

    Yum yum!! This is delicious! I topped with it romano cheese and fresh basil. And served it with garlic toast, I can see this becoming a regular in our house!

    Teeny meatballs is awful subjective. I used a level compressed teaspoon measure to scoop out the meat mixture, then roll.

    A high acid tomato flavor with meatballs tasting like Salisbury steak.

    My Babka used to make a tomato base soup with meatballs. She teased us kids by calling it monkey ball soup after she passed none of us had the recipe this sounds like it could be it! I'm very excited to make this hoping its close will bring back many memories!

    Love it. I got to be the first to try it! yay! So hearty and filling. I didn't change a thing with it except for doubling and my little one helped roll up the meatballs so it went like snap to make. We had fun cooking and talking and eating it together. Delicious soup. I'll be making it again, I know.

    Oh no...lol...I just realized I forgot to add the rice. Now I HAVE to make it again. Just so I can get the full experience. :)

    How much bouillon is in an envelope? We don't have the Oxo brand around here.
    Otherwise I have all the other ingredients.
