Meatball Soup

- 1 lb. lean ground beef shopping list
- 1 tsp. minced garlic shopping list
- 1 tbsp. parsley shopping list
- 1/4 tsp. marjoram shopping list
- 1/4 tsp. dried basil shopping list
- 1/4 tsp. onion powder shopping list
- 1 tsp. salt shopping list
- fresh ground pepper to taste shopping list
- 1 egg shopping list
- flour shopping list
- 2 envelopes Oxo beef bouillon shopping list
- 4 cups water shopping list
- 2 tbsp. tomato paste shopping list
- 1 26 oz. can tomatoes, diced shopping list
- 1 small bay leaf shopping list
- 2 heaping tbsp. uncooked rice shopping list
How to make it
- Mix ground beef, garlic, parsley, marjoram, basil, onion powder, salt, pepper and egg together. Shape into teeny meatballs and roll them in flour to lightly coat.
- Bring the beef bouillon, water, tomatoes, tomato paste and bay leaf to a boil in a large pot.
- Add the meatballs and the rice. cover and simmer for 45 minutes. Serve with a nice crusty bread! Mmmmm.......

Yum yum!! This is delicious! I topped with it romano cheese and fresh basil. And served it with garlic toast, I can see this becoming a regular in our house!

Wow this was good! Michael was practically licking his bowl lol, and he kept commenting on how good the meatballs were :) I added a couple changes and additions I made in the IMI ------->
